195: the 193 member states of the United Nations plus the two UN observer states, the Holy See (Vatican City) and Palestine.

Can I spin only one continent?

Yes. Choose Africa, Asia, Europe, North America, South America or Oceania from the quick lists.

What is the chance of landing on a particular country?

With all 195 countries on the wheel each has a 1 in 195 chance, about 0.51%. On a single-continent wheel the chance is one divided by that continent’s number of countries.
